Peter Brennan

Peter Brennan is our Executive Chef who began working in kitchens at 18. Peter completed an apprenticeship at Jury’s Hotel Dublin, and also Attended DIT for formal qualifications.
At 23 Peter left to go to Switzerland, and spent 2 years in Zurichwith two more years in Appenzell near the Austrian border.
Following this Peter then went to London, where after a short spell at Grosvenor House Park Lane, he joined the Savoy as  Sous Chef in the River Kitchens where the brigade was in excess of 100 chefs. Peter then took up his first Head Chef position in Turners, Walton St, working for Celebrity Chef Brian Turner for Four Years. Following this Peter joined the team at the Conrad Hotel, Chelsea Harbour, as Executive Chef, spending 4 enjoyable years there.
After the Conrad, Peter got the opportunity to work for Orient Express Hotels, As Executive Chef in Reid’s Palace, Madeira.
Returning to Ireland in 1998, He took up the position of Executive Chef at the prestigious Country Golf Estate of Mount Juliet, Kilkenny. Peter ended up spending 8 years here, during that time he oversaw two American Express Golf Tournaments. After re opening a hotel for the Griffin Hotel Group, he then began consultancy work and also ran successful cooking classes mainly focused on adults. After two years, Peter decided it was time to head back into the Kitchens, and is presently in the Parknasilla hotel in Kerry.
